Selection - Choose heads that are compact, firm, and that have dark green outer leaves that look healthy.

Storage - Store lettuce in plastic in the crisper drawer of your refrigerator. Keeps about seven days.

Preparation - Lettuce should be washed and then completely air-dried, spun in a salad spinner, or blotted with paper towels to remove excess water. Do not soak lettuce. Too much water will soften the leaves.

Nutritional Information - Looseleaf lettuce has good amounts of vitamins A and C. One serving size,1 cup (shredded raw), has 10 calories.

Benefits - Lettuce is rich in calcium and iron and also contains vitamins A and C. The darker the leaf color, the higher the nutrient content.
